Karissa Sanchez, former CHS graduate, who has lived in Cashmere her whole life, was unsure about owning a restaurant but ended up deciding to take a big step in her job at Louie’s for many years until April 2023. Her old boss offered her the position because she was getting older and was tired of going to different businesses she owned. She knew Karissa Sanchez would be the best leader overall since she has shown years of experience and dedication.
For employees like CHS junior Hannah Dodrill, who works as a busser at Louie’s, the experience has been just as memorable. Working under Karissa Sanchez and her team also makes the job enjoyable. “The easiest part about working with Karissa Sanchez and Kendren Sanchez is that they are not strict about things like how I do my job or requiring uniforms which makes me feel more comfortable while working,” she explained.
“I was given the opportunity and I was tired of making other people money,” Karissa Sanchez said about becoming the owner of Louie’s. Taking on the challenge of owning a restaurant wasn’t easy, but it gave her the chance to follow her own path.
What does she like most? “Being able to execute my ideas and wants without anyone’s permission,” she explained.
Like many restaurant owners, Karissa Sanchez wears many hats. Her hardest responsibility is covering for anyone who calls out, whether it’s a bartender, hostess, server, dishwasher, or cook. But she also finds strength in her responsibility.
Despite the challenges, Karissa Sanchez has built more than a business. She has a nice calming environment. Locals stop regularly, and tourists find themselves welcomed as if they are family. Each meal reflects not only recipes, but also the heart and effort behind them.
Even though there can be harsh people, Karissa Sanchez always remains professional.
When asked what advice she would give to someone dreaming of owning a restaurant, Karissa Sanchez didn’t hold back:”Be prepared to be disappointed, to do things you’ve never done before, and to work a lot harder than you’ve ever worked for anyone else.” It’s clear that this work is not for the faint of heart, but for KarissaSanchez, the rewards outweigh the struggles. Her leadership, persistence and love for the community shine through every plate she serves.
As Karissa Sanchez continues to run Louie’s, her goal is simple: to keep creating a space where her family, her staff and her community all feel at home. “At the end of the day, we’re doing it together,” she said. “And that makes it special.”
